Grilled Vegetable & Halloumi Kebabs

Cut halloumi into cubes and chop the vegetables. Place everything in a large bowl and add olive oil, red wine vinegar, lemon juice, garlic, and Mama Mia’s Herb Blend, tossing to coat evenly. Thread onto 8 skewers, if using wooden skewers, soak in water for 30 minutes prior to this step. Grill the skewers for 5-6 minutes, turning frequently until lightly charred.

1 (8 oz.) block halloumi cheese

24 cherry tomatoes

1 red bell pepper

1 zucchini

2 T The Olive Bin EVOO

1 T The Olive Bin’s Red Wine Vinegar

Juice of 1 lemon

2 garlic cloves, minced

3 T Salt Sisters Mama Mia’s Herb Blend

Salt & pepper to taste
