Parmesan Cheddar Basil Crackers

Preheat oven to 350° and line 2 baking sheets with parchment paper. Combine Cheddar cheese, basil oil, half and half, and salt in mixing bowl. Slowly add flour, parmesan cheese, and basil – mix until soft and evenly blended. Turn the dough onto a floured work surface. Roll out to about 1⁄8 inch thick. Use a square cutter to cut the crackers out. Place 1/2 inch apart on the baking sheets. Bake for 8 to 10 minutes or until golden. Then cool wire racks before serving. Cheese Spread:Add parsley, chives and sundried tomatoes to food processor and pulse until finely chopped. In a small bowl, combine cream cheese, olive oil and herbs until smooth. Serve on crackers.

2 1⁄2 C shredded cheddar cheese

1⁄2 C of The Olive Bin's Basil Olive Oil

6 T half and half
1 tsp salt

1 1⁄2 C all-purpose flour
1 1⁄2 C grated parmesan cheese
1 1/2 T dried basil
FOR THE CHEESE SPREAD:
1 (8oz) cream cheese, at room temperature
1/4 C fresh parsley
1/4 C chives
1/8 C sundried tomatoes, dried
2 tsp of any of The Olive Bin's Extra Virgin Olive Oils
