Whole Wheat EVOO Banana Bread

In a large bowl, thoroughly whisk together the flours, salt, baking powder, and cinnamon. In a separate bowl, blend together the oil, sugar, and eggs. Combine the wet ingredients in the bowl with the dry ingredients incorporated - do NOT over mix. Fold in bananas and nuts. Scrape the batter into loaf pan and spread evenly. Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Let cool in the pan on rack for 5-10 minutes before un-molding to cool completely on rack.

1 C all-purpose flour
1/2 C whole wheat flour

1 tsp salt
2 tsp baking powder
1 tsp cinnamon (optional)

6 T of The Olive Bin's Butter Olive Oil
2/3 C sugar
2 large eggs, lightly beaten

1 C very ripe bananas, mashed (about 2)
1/2 C toasted chopped walnuts or pecans (optional)
