1 small onion, chopped
1/2 green bell pepper, seeded and diced
6 oz boiled ham, diced
8 large eggs
Salt and pepper, to taste
1/2 C shredded cheddar cheese

Directions
- Preheat broiler and set rack about 6 inches from heat source.
- Warm olive oil in a large, ovenproof nonstick skillet over medium heat. Add onion and pepper; cook, stirring, until softened, about 3 minutes. Stir in ham and saute 1 minute.
- Whisk eggs with salt and pepper until smooth and blended. Pour evenly over mixture in skillet. Place skillet over medium-low heat and cook, shaking often, until frittata is almost set in center and lightly browned on bottom, 10 to 12 minutes. Sprinkle cheese over top.
- Transfer skillet to broiler and cook, watching carefully to avoid burning, until cheese is bubbly, about 1 to 2 minutes. Cut into wedges and serve hot or at room temperature.
