Strawberry Basil Muffins

Preheat oven to 350 degrees. Whisk together the milk, basil olive oil, egg, sugar, and vanilla. Use a spatula or wooden spoon to mix in the flour, baking powder, and salt until batter is just formed. Mix in strawberries. DO NOT OVERMIX! Batter should be thick and lumpy. Divide the batter evenly among the 12 cups in a standard muffin tin. Bake for 20-25 minutes until golden brown on top and a toothpick inserted in comes out clean. Cool completely and serve.

3/4 C + 2 T milk

1/2 C sugar
1/4 C of The Olive Bin's Basil Olive Oil

2 tsp baking powder

1 large egg

1/2 tsp salt
1 tsp vanilla
1 C chopped strawberries

2 C flour
