Cardamom & Lime Olive Oil Cookies

Preheat oven to 350 degrees F. In large mixing bowl, add sugar, oil, and eggs. Beat on medium speed until thick and creamy, about 3 minutes. In a separate bowl, whisk together the flour and remaining dry ingredients. Gradually add dry mixture to wet ingredients, beating between additions until no dry mixture remains. Scoop approximately two tsp of dough per cookie, and place rounded mounds approximately 1" apart on a well-greased cookie sheet. Bake for 10 minutes. Increase heat to 425 degrees F and bake for an additional 2 minutes to aid in creating a crackly golden brown exterior. Remove cookies to a rack to cool. Repeat with remainer of dough.

2 C granulated cane sugar
1 tsp salt
2 tsp baking powder
2 tsp green cardamom seeds, freshly ground
1 C of The Olive Bin's Lime Olive Oil
2 large eggs, whisked
