3 C all-purpose flour
2 C granulated cane sugar
1 tsp salt
2 tsp baking powder
2 tsp green cardamom seeds, freshly ground
1 C of The Olive Bin's Lime Olive Oil
2 large eggs, whisked

Directions
- Preheat oven to 350 degrees F.
- In large mixing bowl, add sugar, oil, and eggs. Beat on medium speed until thick and creamy, about 3 minutes.
- In a separate bowl, whisk together the flour and remaining dry ingredients. Gradually add dry mixture to wet ingredients, beating between additions until no dry mixture remains.
- Scoop approximately two tsp of dough per cookie, and place rounded mounds approximately 1" apart on a well-greased cookie sheet. Bake for 10 minutes.
- Increase heat to 425 degrees F and bake for an additional 2 minutes to aid in creating a crackly golden brown exterior. Remove cookies to a rack to cool. Repeat with remainer of dough.
