3/4 C of The Olive Bin's Butter Olive Oil
1 C light brown sugar, packed
1 C white sugar
2 eggs
1 tsp vanilla extract
2 C all-purpose flour
1 tsp baking soda
1 tsp salt
2 C quick-cooking oats
1 C walnuts, chopped
1 C semisweet chocolate chips

Preheat oven to 350F.
In a large bowl, cream together the olive oil, brown sugar and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
Combine the flour, baking soda, and salt; stir into the creamed mixture until well blended. Mix in the quick oats, walnuts and chocolate chips.
Drop by heaping spoonfuls onto ungreased baking sheets. Bake for 10 minutes in preheated oven. Transfer to wire rack to cool completely.
