Heat oil in a heavy skillet over medium heat. Stir sugar into oil with a wooden spoon until it turns a light caramel color.
Stir in onions, salt, and black pepper. The onion will caramelize immediately. Stir often for 15 mins until onions are browned.
Pour the balsamic into the onions, and simmer for 30 mins until the mixture resembles a jam-like consistency.
Remove from heat and transfer to a serving to cool to room temperature.
You can store the Onion Jam in an airtight container in the fridge.
Would pair great on a grilled cheese, charcuterie board, and as a topping for burgers.
