Roasted Puttanesca Sauce

Preheat the oven to 375 degrees Fahrenheit. In a large bowl, toss tomatoes, garlic, 2 T of olive oil, balsamic vinegar, and mushrooms. Spread on a baking sheet and roast for about 30 minutes, stirring every 10 minutes, until tomatoes are softened. Transfer the roasted mixture to a food processor. Add the remaining 2 T of olive oil, and blend until smooth, adjusting with more oil if needed. In a large mixing bowl, combine the sauce with Tuscan Farmhouse Blend, capers, artichoke hearts, and Kalamata olives. Serve over pasta or your favorite dish!

2 T balsamic vinegar

2 C button mushrooms, chopped

2 T Salt Sisters Tuscan Farmhouse Blend

2-4 T capers

¼ C artichoke hearts, chopped

¼ C Kalamata olives, chopped
