2 fresh mangoes, peeled and sliced
1/3 C of The Olive Bin's Black Cherry Balsamic Vinegar
1/3 C packed light brown sugar
2 tsp minced garlic
2 dashes dried ginger
2 dashes cayenne pepper
Salt and pepper, to taste

- Combine all ingredients in large skillet, and bring to a boil.
- Reduce heat to low for 25 to 30 minutes, stirring occasionally to prevent sticking or burning. Sauce will start to thicken as balsamic reduces. (See more about making balsamic reductions.)
- Remove from heat and let cool. Serve with pork or chicken.
