Citrus Mint Mojito

Cut the clementines into quarters and squeeze their juice into a saucepan. Add the sugar, water, and clementine flesh and bring to a boil over medium hear. Reduce heat and simmer for 5 mins. Pour into a strainer set over a bowl, pressing on the solids to get as much liquid as possible. Cool the clementine syrup until room temperature, then add to a pitcher. Add the cranberry juice, lime juice, balsamic, and vodka. Stir well. Refrigerate until ready to serve. To serve:pour the mixture into an ice-filled cocktail shaker and shake until cold. Pour into martini glasses. Garnish with a clementine slice if desired.

1/4 C of The Olive Bin's Cranberry Pear Balsamic

1 1/2 C vodka
