Watermelon Balsamic Mojito

    1.    Muddle the base. In a sturdy glass, combine mint leaves, 2 lime wedges, and sugar. Gently muddle to release the lime juice and mint oils.     2.    Add flavor. Add the remaining lime wedges and muddle lightly. Stir in 1 tablespoon of watermelon balsamic vinegar. Taste and add a second tablespoon if desired.     3.    Build the drink. Add rum (if using) and fill the glass with ice. Pour in the Olipop, then top with club soda or seltzer until the glass is full.     4.    Finish and serve. Stir gently to combine. Garnish with a mint sprig, lime wedge, or a cube of fresh watermelon.

Watermelon Balsamic Mojito

Ingredients

5 fresh mint leaves

1/2 lime, cut into 4 wedges

1 1/2 tsp white sugar (or ½ oz simple syrup)

1–2 T of The Olive Bin's Watermelon Rosé White Balsamic Vinegar

1 1/2 oz white rum (optional)

Ice (crushed or cubed)

3–4 oz Watermelon Lime Olipop

2–3 oz club soda or plain seltzer

Garnish: mint sprig, lime wedge, or fresh watermelon cube

Directions
