Bacon-Wrapped Roast Chicken with Herbed Mushrooms

Preheat the oven to 400 degrees Fahrenheit. Pat the chicken dry and season the cavity with Pink Himalayan Mineral Salt and pepper. In a bowl, mix onion, lemon, garlic, half of the thyme, 2 T of olive oil, and 2 t of Garlicky Wild Mushroom Rub & Seasoning, then stuff into the chicken cavity. Layer bacon strips over the chicken breast, sprinkle with remaining thyme and seasoning, drizzle with 2 t of olive oil, and place breast side up in a roasting pan. Roast for 1 ½ hours, adding whole mushrooms around the chicken after 45 minutes and basting with pan juices every 20 minutes. The chicken is ready when a thermometer in the thigh reads 165 degrees Fahrenheit. Let rest for 15 minutes, then serve with roasted mushrooms and pan juice.

1 whole chicken

1 small red onion, quartered

1 small lemon, quartered

6 garlic cloves, smashed

1 heaping T salt Sisters Garlicky Wild Mushroom Rub & Seasoning, divided

1 bunch of fresh thyme leaves, chopped

2 T The Olive Bin’s EVOO, plus 2 t for drizzling

½ lb. sliced bacon, cut in half crosswise

3 lbs. whole white button mushrooms, cleaned

Directions
