Blackened Cajun Chicken

Preheat the grill to medium-high heat (about 400°F). Using the flat side of a meat mallet or a rolling pin, pound the chicken breasts to ½-inch thickness. Drizzle the chicken with olive oil and season generously with Blackening Cajun Rub & Seasoning. Place the chicken on the grill and cook for 7–8 minutes. Flip and cook for another 6–8 minutes, or until no pink remains and the internal temperature reaches 165°F. Let rest for 3–5 minutes before slicing.
