1 package (12 oz) frozen mixed vegetables
1 T of The Olive Bin's Garlic Olive Oil
1 T of any of The Olive Bin's Extra Virgin Olive Oils
2 eggs, lightly beaten
4 T of The Olive Bin's Japanese Toasted Sesame Oil
1 tsp of The Olive Bin's Honey Ginger Balsamic Vinegar
3 packages (8.8 oz each) ready-to-serve garden vegetable rice
1 rotisserie chicken, skin removed and shredded
1/4 tsp salt
1/4 tsp pepper

Directions
- Prepare frozen vegetables according to package directions. Meanwhile, in a large skillet, heat Garlic olive oil over medium-high heat. Pour in eggs; cook and stir until eggs are thickened and no liquid remains. Remove from pan and set aside.
- In same skillet, heat 2 T of Sesame oil and Oro Bailen Picual olive oil over medium-high heat. Add rice; cook and stir 10 to 12 minutes or until rice begins to brown.
- Increase heat to high, and stir in shredded chicken, salt, and pepper. Stir to heat thoroughly. Add eggs and vegetables; heat through, breaking eggs into small pieces and stirring to combine. Drizzle with remaining Sesame oil; serve immediately.
Additional Info
This recipe is great served right after cooking, but warms up incredibly well too. Store leftovers in tupperware in fridge, and microwave or re-heat in skillet for later meal!
