Greek Chicken with Tzatziki Sauce

For the chicken:Season chicken with salt. pepper, and oregano. In a large skillet heat Lemon Olive Oil on medium-high heat and add tenders, cooking for 4 to 5 minutes on each side. Add remaining ingredients except feta cheese and simmer on low heat for 5 to 7 minutes longer. Meanwhile, stir together tzatziki sauce ingredients in a bowl. Remove chicken and sauce to serving platter and sprinkle with Feta cheese. Serve with tzatziki sauce on the side.

Ingredients

1 1/4 lbs boneless, skinless chicken tenders

1 tsp sea salt

1 tsp fresh cracked pepper

1/2 tsp dried oregano

2 T of The Olive Bin's Lemon Olive Oil

3 T of The Olive Bin's Oregano White Balsamic Vinegar

2 T capers, drained

1/2 C Kalamata olives, pitted

1/2 C feta cheese, crumbled

 

TZATZIKI SAUCE

1/3 C cucumber, diced

1/3 C plain Greek yogurt

3 T sour cream

2 tsp dill weed, minced

2 tsp fresh lemon juice

1 clove garlic, finely chopped sea salt and fresh cracked pepper

  2. Meanwhile, stir together tzatziki sauce ingredients in a bowl. Remove chicken and sauce to serving platter and sprinkle with Feta cheese. Serve with tzatziki sauce on the side.
