Greek Lemon Chicken Skewers

FOR THE CHICKEN: In a large bowl whisk together all ingredients and then add in the cubed chicken and toss to coat. Cover and refrigerate the chicken for 45 minutes to 3 hours. Heat the grill to medium high heat. Thread the chicken onto metal or wooden skewers, be sure to soak wooden skewers for 30 minutes. Oil the grates of the grill and place the skewers on them. Grill the chicken for 3-4 minutes then flip it over and grill for another 3-4 minutes or until the chicken is cooked through. FOR THE SAUCE: Mix all ingredients together. Drizzle on cooked chicken. Enjoy!

Ingredients

FOR THE CHICKEN: 

1 1/2 lb chicken breast, cut into 1 inch cubes

3 T lemon juice

2 T of The Olive Bin's Garlic Olive Oil

1/2 tsp dried parsley

1/2 tsp. coriander

3/4 tsp salt

1/8 tsp black pepper

 

FOR THE SAUCE:

8-10 oz. Greek yogurt

1/2 C mayonnaise

1 T salt

1 1/2 T lemon juice

1 T of The Olive Bin's Wild Dill Olive Oil

3 garlic cloves, pureed

1 T cold water

  3. Grill the chicken for 3-4 minutes then flip it over and grill for another 3-4 minutes or until the chicken is cooked through.

  1. Mix all ingredients together. Drizzle on cooked chicken. Enjoy!
