Lemony Dill Cucumber Salad

Place cucumber slices in a colander, sprinkle with salt, and let sit for 30 minutes. Meanwhile, combine shallots and vinegar, letting sit for 10 minutes, then whisk in sour cream, olive oil, Lemony Dill Dip, and lemon juice. Pat cucumbers dry, removing excess salt, then toss with the vinaigrette. Add black pepper to taste and chill for at least 30 minutes before serving.

1 t salt

1 shallot, minced

2 T The Olive Bin’s Champagne Vinegar

2 T sour cream

2 T The Olive Bin’s EVOO

2 T Salt Sisters Lemony Dill Dip

2 t lemon juice
