Orange-Avocado Chicken Burgers

Tenderly mix all ingredients except olive oil together, being careful to not mash the avocado. Shape into four patties. Heat blood orange olive oil in a large skillet on medium high. Place patties in skillet; cook until fluids run clear.

1 lb ground chicken
1 lg ripe avocado, cut and cubed
3 green onions, chopped
1 garlic clove, chopped
1/2 C panko flakes
Salt and pepper, to taste
1 T of The Olive Bin Blood Orange Olive Oil (Fused)

Directions

  1. Tenderly mix all ingredients except olive oil together, being careful to not mash the avocado. Shape into four patties.

  3. Place patties in skillet; cook until fluids run clear.

Try serving these burgers on a traditional bun, or over onions sauteed in the Blood Orange olive oil. Beth also suggests adding some Sicilian Lemon balsamic vinegar on top for added flavor!
