Allow the rib roast to sit at room temperature for 30-60 minutes. Preheat the oven to 500 degrees Fahrenheit.
Rub the roast with olive oil and coat generously with Blackening Cajun Rub & Seasoning.
Place on the bottom oven rack and roast uncovered for 45 minutes to sear.
Reduce the temperature to 325, and cover loosely with foil, and continue cooking for 25 minutes or until the internal temperature reached 125.
Remove from the oven, cover with foil, and let rest for 15-30 minutes before slicing and serving.
