Shrimp Scampi Pizza

Preheat oven to 450 degrees F. Grease a large baking sheet or pizza pan; set aside. Prepare pizza crust mix accoring to package directions, using 1 C hot water; cover and let rest. While dough is resting, in large skillet, heat olive oils over medium heat. Cook onion and 3 cloves minced garlic until softened. Using a slotted spoon, transfer onion and garlic to a medium bowl; reserve olive oil mixture. Stir Alfredo sauce, Parmesan cheese, parsley, salt, and red pepper flakes into onion mixture; set aside. In same skillet, reheat reserved olive oil over medium heat. Add shrimp and remaining minced garlic. Cook just until shrimp turn opaque. Remove from heat. Drizzle Sicilian Lemon balsamic over top of shrimp. Shape pizza crust dough into a 12" circle on prepared baking sheet. Spread Alfredo sauce mixture over crust. Top with shrimp and garlic mixture. Sprinkle with Asiago and mozzarella cheese. Bake for 15 to 20 minutes or until crust is crispy and cheese is lightly brown. Garnish with additional chopped parsley.

2 packages (6.5 oz each) dry pizza crust mix

1/2 C chopped onion

1/2 C grated Parmesan cheese

1 lb medium shrimp, peeled and deveined
1 T of The Olive Bin's Sicilian Lemon Balsamic Vinegar
2 oz Asiago cheese, shredded (about 1/2 C)
1/4 C shredded mozzarella cheese
Additional chopped parsley, for garnish
