Tuscan Peach Chicken

Preheat oven to 350° F (175° C). Lightly grease a 9x13 inch baking dish. Rub chicken with Lemon olive oil. Place chicken in the prepared baking dish and sprinkle with 1/2 cup of brown sugar. Place peach slices over chicken, then sprinkle with remaining 1/2 cup brown sugar, ginger, cloves, Lemon olive oil and peach balsamic. Bake for about 30 minutes in the preheated oven, basting often with juices, until chicken is cooked through and juices run clear. Top with chopped basil or scallions.

Ingredients

8 boneless, skinless chicken breast halves or thighs, or 5-6 pork chops

1 C brown sugar

4 fresh peache - peeled, pitted, and slices

1/4 tsp ground ginger

1/8 tsp ground cloves

1 T The Olive Bin's Lemon olive oil (or Tuscan Herb olive oil or EVOO)

3 T The Olive Bin's Peach white balsamic
