Sweet Sausage & Garlic Chive Pasta

Heat large skillet over med-high heat. Add 1 T oil and cook sausage until browned. Drain and set aside. Return the skillet to the stove. Add remaining oil, garlic & onion. Sauté 3-5 min or until onions are tender. Add bay leaf & wine. Reduce wine by half. Add chicken stock slowly, stirring constantly until the sauce comes to a slight boil. Add sausage, reduce heat & stir in cream. Season the sauce with cinnamon, nutmeg, salt & pepper. Simmer 5-10 min to thicken. Meanwhile, cook pasta according to directions. Drain. Divide per servings. Remove bay leaf from sauce & spoon over pasta. Garnish with shaved cheese & sage. Serve immediately.

1 pkg The Olive Bin Garlic Chive Pasta
3 T of any of The Olive Bin's Extra Virgin Olive Oils
1 lb sweet Italian sausage
4 cloves garlic, cracked & chopped
1 medium onion, finely chopped
1 bay leaf
1 C white wine
1 C chicken stock
1/2 C heavy cream
1/8 tsp ground cinnamon
1/2 tsp ground nutmeg
salt and pepper to taste
1 lb baby spinach
asiago cheese (shave for garnish)
4-6 sprigs sage leaves cut into chiffonade (about 2 T)
