Pear Salad with Feta and Cranberries

Toast the almonds in a skillet over medium low heat for 6-8 minutes or until golden brown and fragrant, tossing every few minutes. Set aside to cool slightly. Place the lettuce, sliced pear, dried cranberries, feta and toasted almonds in a bowl Add the desired amount of balsamic dressing and toss gently to coat. Serve immediately and enjoy!

Ingredients

  • 1/3 C slivered almonds

  • 6 oz lettuce 

  • 1 large ripe Bartlett pear cored and sliced into 1" pieces; pear should be ripe yet firm

  • 1/2 C crumbled feta cheese

  • 1/3 Cdried cranberries
