Spinach and Raspberry Salad with Cascadian Wild Raspberry Dressing

Combine spinach, spring mix, mint leaves, grape tomatoes, and fresh raspberries in a large bowl. Place shallots, salt, pepper, and balsamic vinegar in a blender. Pour olive oil in slowly while blending. Blend until smooth and chill. Pour dressing over salad and serve.

3 C fresh baby spinach
2 C spring mix
1/4 C mint leaves, finely chopped
1/4 C grape tomatoes, halved
1/4 C fresh raspberries
1/4 C of any of The Olive Bin's Extra Virign Olive Oils
1/4 C of The Olive Bin's Wild Raspberry Balsamic Vinegar
1 T minced shallots
Sea salt and black pepper, to taste

Directions

  1. Combine spinach, spring mix, mint leaves, grape tomatoes, and fresh raspberries in a large bowl.
  2. Place shallots, salt, pepper, and balsamic vinegar in a blender. Pour olive oil in slowly while blending. Blend until smooth and chill. 
  3. Pour dressing over salad and serve.
