Watermelon Feta Salad

MIx watermelon, feta, and red onion. Coat with olive oil and mix. Serve on a bed of spinach leaves or toss with spinach leaves. Drizzle with balsalmic and add black pepper to taste. Enjoy!

Ingredients

3-4 C of 3/4 inch cubed watermelon

6 oz feta cut into 1/2 inch cubes

1/4 C red onion, seperated into rings (optional)

any of The Olive Bin's Extra Virgin Olive Oils

2 C spinach leaves

The Olive Bin's Traditional 18-Year Dark Balsalmic Vinegar

pepper to taste

Directions
