Cranberry-Coconut-Cashew Granola

Preheat oven to 250 degrees. In a small bowl, whisk together olive oil and balsamic vinegar until thoroughly combined. In a large bowl, mix all dry ingredients except the cranberries. Pour the oil and balsamic mxiture over the oats and mix well, until dry ingredients are completely covered. Spread the granola out ont oa baking sheet covered in parchment paper and bake for approximately 1 hour, until golden brown and fragrant. Cool completely, then mix in the dried cranberries. store in a sealed container for up to one month.

4 C old-fashioned oats
1 C dried cranberries
1 C cashews
1 C unsweetened flaked coconut
1/2 C of The Olive Bin's Lime Olive Oil
1/3 C of The Olive Bin's Coconut Balsamic Vinegar
