2 C old-fashioned rolled oats
1 C sweetened, shredded coconut
1 C sliced almonds
3/4 C dried cranberries
¼ C The Olive Bin's Orange Olive Oil (Fused)
1/4 C good honey
1 tsp cinnamon
OPTIONAL: cashews, walnuts, pecans, dried fruits, dark chocolate chips, or any other dry granola ingredients of your choice

- Preheat oven to 325 degrees. Toss the oats, coconut, almonds and cranberries together in a bowl. Pour olive oil and honey over the oat mixture. Add the cinnamon and stir with a wooden spoon until well-coated.
- Spread onto a rimmed cookie sheet and bake for approximately 20 min, stirring frequently (2 or 3 times) until the mixture turns a nice, even golden brown. Adjust baking time to fit your oven's heat (watch carefully because it can brown quickly). Remove from oven and allow to cool, stirring occasionally.
- Store cooled granola in an air-tight container. Try over ice cream or yogurt.
