Cheese Crusted Acorn Squash

Wash an acorn squash. Cut off the top and the bottom. Split the squash down the middle, then scrape out the seeds and pith. Slice each half into thin slices. Brush a sheet pan with additional Tuscan Herb Olive Oil. Lay the slices out on the brushed pan in a single layer. Combine first 8 ingredients in a bowl. Pat onto the squash slices. Bake at 450 degrees F for 15 minutes or until soft.

Ingredients

2 garlic cloves, minced

6 minced sage leaves

1 T lemon zest

1 C shredded Parmesan cheese

3 T bread crumbs

3 T of The Olive Bin's Tuscan Herb Olive Oil

1 tsp salt

1 tsp red pepper flakes

1 acorn squash
