2 medium zucchini
2 medium yellow squash
2 T of The Olive Bin’s Garlic Olive Oil
2 T of The Olive Bin’s Butter Olive Oil
2 T of The Olive Bin’s Tuscan Herb Olive Oil
Sea salt, to taste
Course ground pepper, to taste
½ C Parmesan/Romano cheese
¼ C Italian bread crumbs
Zucchini & Squash Sauté Bake

Directions
- Cut zucchini & squash into ¼" slices.
- Salt & pepper to taste, then sauté in oils over medium heat until vegetables are medium soft and starting to brown.
- Drain off oil (the broiling step is too hot for them). Preheat broiler.
- Spray casserole dish with a non-stick cooking spray. Transfer the zucchini and squash to the pan.
- Combine; sprinkle cheese and bread crumbs over the top of the zucchini and squash. Broil until the cheese/bread crumb mixture browns. Serve immediately.
